History

“Behind every wine there is a story that needs to be told”: so goes one of the sayings of the Baron Di Pauli winery, located in Kaltern, a small town that is a mandatory stop for those who travel along the renowned South Tyrolean Wine Road.

The Di Pauli family has ancient origins, allowing it to look back on 300 years of history, to the time when the estate could proudly call itself “supplier to the imperial and royal court of Austria-Hungary” and its wines earned the admiration and praise of the Tsars of St. Petersburg.

Today, the estate covers an area of about 15 hectares and is divided into two different wine-growing areas: Arzenhof, located near Lake Kaltern, covering approximately 10.5 hectares, and the “Höfl unterm Stein” in Söll, Tramin. which covers the remaining 4.5 hectares.

The Arzenhof is Caldaro’s largest vineyard, made unique by its terraced shape overlooking the lake. It is an alluvial moraine cone facing south-east, consisting of limestone gravel, porphyr and quartz sand, mixed with clay. Thanks to the Mediterranean microclimate, the red grapes here are always perfectly ripe, producing wines of great depth. The white grapes, on the other hand, grow on the clay and limestone soil of Tramin, at higher altitudes, where temperatures drop at night. The properties of the soil, the Mediterranean climate, the favourable influence of Lake Kaltern and the cool night breezes from the Alps make these wines unique.

Various white and red grape varieties, including Gewürztraminer, Riesling, Pinot Blanc, Sauvignon Blanc, Sauvignon Blanc, Schiava, Merlot, Cabernet Sauvignon, Cabernet Franc and Lagrein are grown on the estate. In order to achieve the best quality, the yields per hectare are reduced to a minimum, to concentrate the perfection of the aromas and perfumes in a few bunches, hand-picked only when the grapes are ready for harvest.

In the cellar the wine then has all the time necessary to develop the best of its range of aromas, maturing and refining without any haste.

Each bottle is the result of a meticulous and careful production that you will be able to taste in the glass.
